  Because we need oxygen to convert stored energy into active energy. This is a complex biochemical reaction. To compensate for the oxygen utilised in the conversion of stored energy, we tend to breathe faster and at a higher rate than when we are at rest. Also note that we tend to breath faster when we are frightened! Would you guess why?
